Melon Popsicles with Rose Water

These melon popsicles are delectable and refreshingly cool. Delicately flavored with rose water, this recipe results in the most incredible, soft, creamy, frozen bite of melons! cup honeydew melon

cup yogurt

tbsp honey

rose water
Instructions
1 Dice the cantaloupe and honeydew melon into small pieces. 2 Spread the melon pieces in a single layer on a parchment paper lined sheet tray and freeze it. 3 Transfer the frozen cantaloupe to a high speed blender. Add half the yogurt (or cream), honey and rose water and blend it. Stop and stir as needed. 4 Adjust honey as per sweetness of the melons. 5 The well blended popsicle mixture will be smooth, thick and very chilled. 6 Divide half of the cantaloupe popsicle mixture in 6 popsicle molds. Place the popsicle molds and the remaining cantaloupe mixture in the freezer, while you work with the honeydew melon in the next step. 7 Place the frozen diced honeydew melon in a high speed blender. Add the remaining yogurt (or cream), honey and rose water and blend it. Stop and stir as needed. 8 Divide half of the honeydew melon popsicle mixture in 6 popsicle molds over the cantaloupe layer. 9 Place the remaining honeydew mixture in the freezer, while you work with the cantaloupe mixture in the next step. 10 Layer remainder of the cantaloupe mixture in the 6 popsicle molds. Repeat the same with a final layer of honeydew melon mixture. 11 Place the popsicle molds in the freezer and allow the popsicles to freeze overnight.View original recipe
