ripe banana

cup wheat flour

cup cocoa

tsp instant coffee powder

tsp baking powder

tsp baking soda

0 Preheat oven to 350°F (175°C). Grease a loaf pan (9” x 5”) and line it with parchment paper, leaving a two-inch overhang. Set aside. 1 In a food processor, combine the dates and milk. Process until you get a smooth paste. Add the oil and pulse to incorporate. Then, add the eggs and vanilla, and pulse again until everything is well combined. Finally, add the mashed bananas and pulse just a few more times until smooth; don’t over-process. 2 In a medium bowl, sift together the flour, cocoa powder, coffee powder, baking powder, baking soda, and salt. 3 In a large bowl, gently stir the dry ingredients into the wet ingredients to create a thick batter—be careful not to over-mix. Use a spatula to fold in ¾ cup of the chocolate chips. Tip: If the batter seems too thin, feel free to adjust the consistency by adding a little more flour. The batter should be thick but spreadable. 4 Spoon the batter into the prepared loaf pan and sprinkle the remaining ¼ cup of chocolate chips on top.
